Is it possible to add Tex/Latex characters, such as characters rho, gamma, psi, and more advanced stuff such as equations?

Since all text is potentially UTF-8, it also supports greek characters and mathematical symbols (see the multiaxis demo, where the top axis shows greek pi literals). However, mathematical markup like in latex or MathML isn't supported and probably won't be in the forseeable future. The necessary mathematical layout engine would be a too big burden for the project at this stage.
The QCPItemText
will support richtext, probably in the next minor version (1.3). This will then additionally to the greek symbols allow super- and subscript for displaying powers, chemical formulae, tensors, etc.
